Madras Kangaroo Mince Curry

What you'll need

1kg Gourmet Game Kangaroo Mince

1/3 jar Madras curry paste

1 large onion, diced

1 cup chicken or beef stock

2 cups frozen peas

400g canned tomatoes

1-2 fresh red chilli, finely sliced (or chilli flakes)

Coriander, for garnish (optional)

How to cook it

In a heavy based pan, heat a small amount of oil. Fry onion until translucent. Add curry paste and fry for 1 minute.

Add kangaroo mince and cook until browned, stirring continuously to break up any lumps.

Add stock (just enough to cover the mince), tomatoes and stir well. At this stage you can add chillies for extra spice if you like, bring to just boiling, then reduce heat to simmer. When liquid is reduced by half, stir in frozen peas and continue to simmer for 5 minutes.

Serve with rice.

TIP: Use any left over curry mixture as a pie filling, using short crust pastry sheets.
