Kangaroo Stroganoff

What you'll need

600g Gourmet Game Kangaroo Fillet
3 tbs olive oil
1 onion, diced
1 garlic clove, crushed
250g button mushrooms, sliced
1 tbs tomato paste
1/3 cup plain flour
1 tsp wholegrain mustard
1 cup Light & Creamy Evaporated Milk
Salt & pepper, for seasoning
Fresh Parsley, chopped

How to cook it

Slice kangaroo fillet in to strips (not too thin). Coat roo with flour and season with salt and pepper. Heat 2 tbs oil in a heavy-based pan and cook kangaroo strips quickly in batches, until just browned. Transfer to a bowl.

Use remaining oil to fry onion, garlic and mushrooms and cook over medium heat for 5 minutes. Stir in tomato paste and mustard, then return the kangaroo to the pan with the evaporated milk, stir through. Allow to gently simmer on medium-low heat for 5 minutes. Add a little water if the sauce is too thick.

Stir through fresh parsley and serve with pasta or rice.
