Wild Venison is ethically sourced from the open rangelands of Australia. It is naturally lean, nutritious and delicious with no added hormones or antibiotics. Venison and kangaroo can be prepared in similar ways, being careful not to over cook as it is a very lean meat. Gourmet Game Wild Venison is available through some Coles stores (VIC, NSW, QLD) and some IGA stores (SA & VIC), or you can ask your local supermarket about stocking it.

How to Cook

Cook in hot pan for approx 4 minutes each side for a medium-rare finish. Allow to rest before serving. Tip: Sear quickly on both sides in hot pan, then transfer to oven for 9 minutes. Remove and cover with foil, rest for 10 minutes before serving. Cooking times may vary depending on size and thickness of cut (regardless of weight) and type of stove/oven used.
