Campfire grilled kangaroo fillet with Josh Whiteland

Josh Whiteland from Koomal Dreaming tours shares one of his favourite kangaroo dishes here:

Kangaroo is eaten every week in my house and the family loves it.

Because kangaroo is so versatile, one dish among many I like to cook;  is campfire grilled kangaroo fillet.

Marinate3-4  kangaroo fillets in garlic, light soy sauce, quondong chilli jam and olive oil.

Grill over hot jarrah coals for a few minutes until medium rare (alternatively, cook on the barbecue).

Allow to rest, before slicing into strips and then toss through a salad of rocket, saltbush, dune spinach, sea celery, cherry roma tomatoes and avocado. Enjoy….
